Eggs Benedict @ Sunshine Co.
Wow is this place popular. We got there maybe an hour after opening (again, supporting our theory that early brunch is better), and there was a good wait. Luckily it was shorter for two but there wasn't a great place to wait that wasn't in the sun so it was a little uncomfortable waiting for the half hour we hung out. There was still a line when we left so if you're planning to go here, come early. Was it worth the wait? Here's how everything rated.
Base: English muffin. It was a little big but had a pretty good toast level so it held up well. It never got soggy and provided a sturdy base for each bite. Nothing special, but it did it's job.

Non-Egg Protein: Canadian bacon. It was a little thinner than I would have liked, but it felt like real ham and not just cheap deli meat, so that was a plus. The taste was good, I just wish it was either thicker or wider or both to be enough for the muffin.

Eggs: Pretty good. One was pretty perfect and the other was just slightly over. Just over in the sense that the yolk ran a bit slower and was a little thicker, but that's not bad at all. Considering some of the other yolks (or lack thereof) lately, this was a win. If all their eggs are this good, I can see why it's this crowded.

Sauce: Hollandaise. There was certainly plenty and it was a good consistency. It was pretty standard in terms of taste so nothing too special, but it did its job.

Sides: Potatoes and salad. The potatoes were really good and seasoned well with a good amount of rosemary, but there were so few. Maybe they were running short because of the crowd? I thought the salad was a little bitter, but there was no arugula so I'm not sure what it was. The husband thought it was good so maybe I'm just more sensitive to it.
